Pop them in the fridge for about 30 minutes to set.

What you’ll need:

·         500g carrots (peeled and sliced) or whole thin carrots peeled

·         Fresh parsley (optional)

How to make them:
Boil the carrots in salted water for about 8–10 minutes until just tender. Drain them well. In a pan, melt the butter over medium heat, then stir in the honey. Add the carrots and toss until they’re nicely coated and slightly glossy. Season with salt and pepper to taste, and sprinkle with chopped parsley if you like.

These carrots are simple but full of flavour, and they pair beautifully with any main dish.

 

3. Easy No-Bake Lemon Cheesecake Cups

For a fresh and light dessert, these individual cheesecake cups are a real winner.

What you’ll need:

·         250g cream cheese (softened)

·         1/3 cup icing sugar

·         1 teaspoon vanilla extract

·         Zest and juice of 1 lemon

·         1 cup whipped cream

·         Crushed biscuits (like digestives)

How to make them:
In a bowl, beat the cream cheese, icing sugar, vanilla, lemon zest, and juice until smooth. Gently fold in the whipped cream until the mixture is light and fluffy. In small glasses or jars, layer crushed biscuits at the bottom, then spoon over the cheesecake mixture. Repeat the layers if you like.

Chill in the fridge for at least an hour before serving. You can top them with extra lemon zest or even a few berries for a pop of colour.
